The challenge of another
Monday is under our belt (Two more to go).
After a weekend that was “chocolate heavy”, I needed to go in a
different direction and this cookie was perfect. I said earlier that we always look for any
opportunity to feature coconut and this simple cookie combines that treat with
the right amount of brown sugar and cinnamon.
These were very easy to make
and full of flavor. The finished product
had a nice crispy edge and a chewy inside.
The recipe made four dozen, so there are plenty to share.
The elves made their way to
Montibello today and they’ll continue to make the rounds every day this week.
